摘要： Machines and methods capable of producing diced products from a variety of materials. Such a machine includes a knife adapted to slice food product to produce slices, a circular cutter comprising knives that are adapted and arranged to cut the slices into strips, a cross-cutter comprising knives that are adapted and arranged to produce a cross-cut in the strips, and a shear plate that is at least partially between the circular cutter and the cross-cutter. The shear plate defines a first shear edge in proximity to the knives of the cross-cutter and is adapted to ensure dicing of the strips received by the cross-cutter from the circular cutter. A support bar supports the shear plate, and a feature is provide for adjusting the proximity of the first shear edge relative to the knives of the cross-cutter.

摘要： Methods and equipment suitable for slicing products into lattice-type slices or chips. The methods and equipment utilize a knife assembly that includes a corrugated knife having oppositely-disposed surfaces that terminate at a cutting edge. The knife assembly further includes a knife holder having a registration surface and an oppositely-disposed knife seat configured to mated with a first surface of the corrugated knife, and means for securing the knife to the knife seat of the knife holder. The knife seat comprises a pattern of peaks and valleys complementary to a pattern of peaks and valleys in the first surface of the corrugated knife. The securing means cooperates with the knife holder to inhibit accumulation of solids of products along at least one of the first and second surfaces of the corrugated knife, and/or stabilizes the knife by reducing a cantilevered beam length thereof.

摘要： An apparatus for cutting a food product is disclosed which utilizes a cutting wheel having a plurality of knives extending between a hub and a rim in conjunction with other cutting knives to produce a multi-dimensional cut of the food product. The use of the additional cutting knives enables the apparatus to dice a thin layered or leafy food product (cut it into small pieces) as opposed to merely slicing the food product in a single dimensional cut. The additional cutting knives may include one or more julienne knives attached to each of the knives of the cutting wheel so as to extend approximately at right angles to the cutting plane defined by the cutting wheel knives. A circular knife may be located upstream of the cutting plane defined by the cutting wheel such that the rotary knife longitudinally cuts the food product before it passes through the cutting plane. The apparatus according to the invention also utilizes separate drive motors for the feed conveyor and for the cutting wheel. In order to prevent deflection or deformation of the larger cutting wheel, a rim stabilizer engages the cutting wheel rim to prevent any deflection of the rim which, may cause deflection of the cutting knives, as the cutting wheel rotates.

Such a clamping assembly may include a knife holder, a knife supported on a surface of the knife holder, and a clamp that clamps the knife to the knife holder. The cam rod has a camming surface that engages the base portion of the clamp when the cam rod is rotated to a clamping position to clamp the knife against the knife holder, and a radial concavity sized to accommodate the base portion of the clamp such that the base portion is loosely received within the radial concavity when the radial concavity faces the clamp in an open position thereof.

摘要： Machines for cutting products and impellers therefor. Such an impeller is adapted to be coaxially mounted within a cutting head for rotation therein. The impeller includes a lower plate having a paddle that directs material placed on the lower plate in a radially outward direction of the impeller when the impeller is rotated. A recess in the lower plate is continuous between upper and lower surfaces of the lower plate and contiguous with the perimeter of the lower plate to define a passageway to enable debris at the upper surface to exit the impeller therethrough. A chute is located at an outer radial extent of the paddle and defines a first opening adjacent the paddle, a second opening adjacent the recess, and a passageway within the chute and between the first and second openings through which the debris passes before exiting the impeller through the passageway of the recess.
