    • A meat trussing system is provided which incorporates the use of an elastomeric net to receive and restrain meats and other food components, both unitary and combinations including independent meat and/or food elements. At least one flexible wrapper is provided into which the meat and/or food products are encased forming a cylindrical circumferential wrap having a low coefficient of friction with respect to the elastomeric net. The wrapper permits a relatively easy insertion of the wrapped food products into the elastomeric net. The wrapper is preferably provided with at least one perforation adapted to be circumferentially disposed near the midpoint of the food products within the elastomeric net. A method of use includes the deformation of the meat and/or food product. In order to sever the perforation which permits the relatively easy removal of the now separated wrapper portions from between the meat and/or food products and the elastomeric net.

    • An apparatus for automatically delivering placed and oriented pieces of meat to a netter for wrapping and netting is described, in which the placement and orientation of the meat pieces remains unchanged from initial placement until final wrapping and netting. The apparatus is a conveyor having a series of compartments in which the meat is placed and oriented. The conveyor is situated below the level of the breech of the feed tube to the netter, so that a compartment carried on said conveyor will be precisely aligned with the opening to the feed tube. A ram pushes the meat pieces out of the compartment and into the feed tube, without changing the placement or orientation of the meat pieces relative to each other. The netter wraps the meat pieces in a collagen film and encases the wrapped meat in a net for further processing.

    • A meat product of at least one individual chunk of meat cooked in a compact form in an outer mesh netting is provided. The meat product is simultaneously wrapped and covered with both a thin and fragile edible inner collagen film and the outer netting such that the edible inner collagen film is in surface contact with the meat product as a casing and as a separating medium to hinder adhesion of the outer netting to the meat product. The netting completely encloses both the meat product and the inner collagen film. The meat product is then heat treated by cooking it as well as the edible inner collagen film and the outer netting to avoid any problem of sticking of the netting to the meat product and preclude damage to the edible inner collagen film. The edible collagen film is insoluble in water so that the cooking makes it possible to provide a compact, ready-to-eat meat product with a flawless, intact outer surface. Finally, the outer netting is removed to obtain a visually pleasing meat product.

    • An automatic meat stuffing apparatus which comprises a meat extruder including a filling nozzle, a casing supply unit including a carrier for carrying a tubular network casing from a reel to a point adjacent to the filling nozzle while running axially with the filling nozzle, and a net expander for expanding an open end of the casing through which meat is stuffed in the casing. The net expander is reciprocably movable along the filling nozzle. Pawls are provided for holding the casing, with the pawls being closable at a point adjacent to the open end of the filling nozzle. The pawls are openable so as to expand the open end of the casing and allow meat to be stuffed therein through the filling nozzle. A cutting and clipping device cuts the casing to a desired length and closes the casing with a clip, with the cutting and clipping device being located adjacent to the open end of the filling nozzle.
