    • The invention concerns a method for volume division of bread-making, bakery, and pastry dough and the like, contained in a hopper. The method includes allowing the dough to flow by gravity into a chamber capable of measuring an amount of dough to be divided and extending beneath an opening located at the base of the hopper. The chamber is at least partly closed. The volume division of the dough into dough pieces of the amount of dough contained in the chamber is started. The divided dough pieces from the chamber are removed to be set on a discharge carrier. The invention also concerns a device for implementing the method.

    • A dough treatment facility comprises, among other things, a dough kneading arrangement, which comprises an inner kneading drum, an outer kneading drum which is moved in relation thereto within the scope of a kneading motion, and a plurality of kneading compartments which are at least partially defined by the kneading drums. The kneading motion is actuated by means of a kneading drive. This drive comprises a first drive component for rotation of the inner kneading drum, a second drive component for rotation of the outer kneading drum, and a third drive component for periodic motion of the outer kneading drum relative to the inner kneading drum, this motion having a motional component parallel to the longitudinal axis of the kneading drums. A kneading drive gear actuates the driving motions of the three drive components, derived from the motion of a single transmission shaft. The result is an easily adjustable kneading drive which can be adapted in particular to the size of the kneading compartments, the size of the dough pieces or the dough recipe.

    • An apparatus for kneading dough into round pieces is provided. The apparatus includes an inner drum disposed within an outer drum. The inner drum includes an outer periphery on which deepenings are disposed. The deepenings are assigned to the openings of the outer drum. The apparatus also includes a first drive for driving the inner drum in relation to the outer drum such that the deepenings of the inner drum execute a kneading movement in relation to the openings of the outer drum. A support is guided along at least a section of the periphery of the lower half of the outer drum. The support includes a plurality of links interconnected to form an endless chain. The support is spaced apart from at least a portion of the periphery of the outer drum and forms a closed substantially flat surface facing the outer drum. A second drive is included for driving the endless chain such that the plurality of links follow the rotation of the outer drum.

    • A dough divider having a dough chamber and, reciprocating therein, a dough feeding plunger for feeding a batch of dough to a measuring chamber whose volume is adjustable for producing pieces of dough of any desired volume and weight. For the driving of the dough feeding plunger, this is connected to a driving motor through the intermediary of a spring device. To avoid undesired working of the dough in the dough chamber during feeding of the dough to the measuring chamber, the spring device in the dough divider according to the invention is double-acting, and the dough divider is provided with an adjustable abutment which stops the dough feeding plunger as it moves away from the measuring chamber, such that the effective volume of the dough chamber may be adapted to the measuring chamber volume as set. Since the spring device is double-acting, relative motions between the driving motor and the dough feeding plunger can be absorbed by the spring device in both directions of travel of the plunger.

    • A variable piston arrangement is provided which is especially adapted for use in roll and bread dividing and shaping machines and includes one or more separate pistons each selectively and operably arranged in a single piston-housing used to size and shape baking dough to predetermined specifications. The piston-housing itself is disposed in a separate housing and as such may function as a separate piston in the following manner. Each of the separate pistons and piston-housing are arranged and controlled so that at least partial removal or withdrawal of one or more of the separate pistons from the piston-housing or withdrawal of the piston-housing from the separate housing will produce a predetermined vacated area or space which conforms to the size and shape of the rolls or bread to be baked. The predetermined area vacated by the one or more separate pistons or piston-housing may be varied in size and shape, as desired, so that a single variable piston arrangement may take the place of multiple piston-housing arrangements required in operating conventional roll and bread dividing and shaping machines used in dividing and shaping rolls and breads of different sizes and shapes.
