    • A method and apparatus for filling a steam chamber. In one exemplary embodiment, a steam chamber is placed in selective communication with a vacuum pump and a heat transfer medium, such as a source of deaerated water. The steam chamber is then placed in communication with the vacuum pump, which draws a vacuum on the steam chamber and begins removing air from the interior thereof. Once a sufficient vacuum has been drawn on the steam chamber and substantially all of the air removed therefrom, the steam chamber may be placed in communication with the heat transfer medium. In one exemplary embodiment, the heat transfer medium is deaerated water. A predetermined amount of heat transfer medium is then allowed to fill the steam chamber. Once the predetermined amount of deaerated water has been received within the steam chamber, a steam chamber may be sealed.

    • An oven for heating food products on a conveyor includes two chambers. A conveyor belt circulates within each chamber and between the chambers. Each chamber includes a drum oriented with a vertical axis, a motor for rotating the drum about the axis, and a conveyor belt having a length helically surrounding the drum. The conveyor belt has an infeed end and outlet end. A plenum is located within the chamber along an outer extent of the chamber and is curved substantially concentrically with the drum. The plenum forms a substantially closed air pathway having an inlet at one end and an outlet at an opposite end passing air into the first chamber. A fan is arranged to circulate air within the chamber and force air into the plenum inlet, through the plenum and out of the plenum outlet. A heat exchanger is arranged in the plenum to heat the air flowing within the plenum.

    • A combination steamer is described that has a cooking chamber which is externally delimited by a floor, walls, and a door. A steam generator and a first heater disposed on at least one of the walls are assigned to the cooking chamber. The floor is provided with a second heater. Both heaters are disposed outside the cooking chamber. The floor is formed as a cook top provided with the second heater. The walls are each in the form of a heating panel provided with a first heater. The cook top is retractable from the cooking chamber in the manner of a drawer. Thus food can be cooked on the cook top when the cook top is either inside or outside the cooking chamber.

    • A pressureless or atmospheric steamer for cooking food with a high cooking efficiency has a cooking compartment with an outlet for steam and condensate that feeds to a tempering tank via an outlet conduit. The outlet conduit is spaced closely from the controlled water level in the tempering tank, and is in fluid communication with the atmospheric vent to create an open steam cooker. A steam generator is adjacent the cooking compartment and has a water reservoir, a heat exchanger secured within the reservoir in a heat-transferring relationship at an exterior surface of the heat exchanger with the water held in the reservoir, and a heater that supplies heat to the interior of the heat exchanger. The tempering tank has a drain and level controls for a water supply held in the tempering tank. A pressure-sensitive device is disposed to measure the steam pressure in the cooking compartment and to generate electrical output signals indicative of minimum and maximum pressure values to control the operation of the heater to maintain the steam pressure in the cooking compartment within that operating range. The steamer has an in-built water filtration system for water supplied to the water reservoir.
