    • A power operated knife comprises a blade supporting structure supporting an annular blade for rotation about a central axis. The blade and blade supporting structure are engagable along bearing contact locations that are spaced apart in a direction parallel to the axis so that the blade is stabilized both radially and axially as the knife operates. The blade supporting structure comprises a split blade housing member that is radially expandible and contractible to receive the blade. The split blade housing member and blade engage along relatively short lines of bearing contact that serve to minimize friction and blade heating when the knife operates. The bearing locations are spaced apart both circumferentially around the blade perimeter and in the direction of the axis so that the blade position is stabilized during operation of the knifes.

    • A game hoist apparatus including a base unit attachable to the tow hitch of a vehicle, a boom and winch pulley system disposed on the base unit to attach and vertically lift a game animal for field processing.     • An apparatus for processing a carcass middle portion of an animal includes a working surface onto which the carcass middle is positioned, the working surface supported by a frame above a support surface. A loin knife assembly for separating a loin portion from the carcass middle is disposed at a first selected location on the frame. A skinner assembly is disposed at a second selected location on the frame for skinning skin and fatback from the loin portion. A conveyor conveys the carcass middle past the first selected location to engage the loin knife assembly and past the second selected location to engage the skinner assembly. In preferred embodiments, the skinner assembly includes a contoured blade using a tooth roll assembly having tooth rolls of varying diameters driven by drive rolls having varying diameters based on the tooth roll diameters.

    • An improved apparatus and method for skinning large game animals is used by fastening the animal head to an upright at one end of the apparatus structure, making incisions at and cuts around the neck and attaching to the skin the end of a cable from a manually powered windlass mechanism mounted on an upright at the opposite end of the structure. As the windlass is operated the skin is drawn back over and off the carcass and the carcass is brought to a near horizontal position in open space between the two end upright parts of the structure. Two extensions are then swung into place along the animal's hind legs and attachments are made to the leg tendons. The skinned hide is then removed from the hind legs. The carcass is thus secured in a convenient and sanitary position for removing usable meat.
