    • Material obtained from animals, poultry, or fish and containing edible flesh along with normally inedible relatively hard or tough components, such as bone, gristle, tendons, etc., is fed in ground condition into one end of a perforated conduit that has a conveyor screw therein which progressively decreases in conveying capacity from the feed end of the conduit to an imperforate discharge end thereof. Such inedible components are compacted within the imperforate discharge end of the conduit by an extension of the conveyor screw prior to discharge following build-up and conveyance along the interior surface of the perforate portion of the conduit as a filter mat through which edible flesh is forced toward and through the perforations of the conduit to provide a substantially bonefree edible product. The discharge passage surrounding the extension of the conveyor screw can be varied in size, preferably by a tapered ring that is movable back and forth axially of the conveyor screw extension, and preferably the spacing between conveyor screw and conduit is variable. The forward faces of the conveyor screw flights are preferably concave to provide a forwardly projecting circumferential overhang that tends to keep particles of bone near the axis of the screw, and the conduit wall thickness is unusually thick so as to withstand high pressures. Unusually high production rates can be obtained by feeding finely ground material into the conduit by means of a high pressure pump. The discharged and normally inedible components can be slurried in a digestant liquid and the digested material recovered as a food product by the application of centrifugal force. In instances where some minute particles of bone are discharged with the .[.fleshly.]. .Iadd.fleshy .Iaddend.components, they can be homogenized by subjecting such .[.flesh.]. .Iadd.fleshy .Iaddend.components to an attrition operation.

    • An improved blade holder for rotatably mounting a circular-shaped meat-cutting blade on one end of a power-driven handle. A split metal ring is formed with an interior annular groove for rotatably mounting a circular cutting blade thereon. A pair of arcuate-shaped flanges generally T-shaped in cross section are formed integrally with the ring on opposite sides of the split and extend axially upwardly from the top wall of the ring. The T-shaped flanges form an alignment groove for properly aligning the holder on the power-driven handle, and a pair of radially inwardly extending arcuate projections. The projections are received within a pair of complementary-shaped grooves formed in a lower end of an arcuate-shaped mounting plate for removably mounting the ring on the plate. A pair of holes are formed in the mounting plate through which a pair of screws extend which are engaged in a pair of tapped holes formed in the power-driven handle for mounting the plate and attached ring on the handle. The two-piece blade holder enables the split ring to be replaced periodically without replacing the entire blade holder assembly as heretofore required with one-piece all-metal holders.

    • Apparatus for removing and recovering meat from trimmed and untrimmed bone fragments comprises a hollow sleeve open at one end for receiving a quantity of bone fragments to be processed. Hydraulic cylinders raise the sleeve to bring one end into engagement with an extrusion block, and a piston slidably disposed at the other end of the sleeve is advanced initially by relatively high speed jack cylinders and finally by a low speed ram cylinder to compress the bone fragements against the block. The extrusion block includes a plurality of concentric annular recesses and interfitting extrusion rings which form an inwardly facing foraminous surface through which meat recovered in fluid form as a result of the compression process passes. The rings are slidably received within the recesses to facilitate removal for cleaning, and are partially extended from the recesses by a pneumatic cylinder after each compression cycle to dislodge bone residue from the foraminous surface. A pressure and seal is maintained between the sleeve and the piston and extrusion head by the combination of an O-ring fitted into an outer circumferential channel on the piston and an inner circumferential channel communicating with an outflow line which relieves pressure from the O-ring.
