A first recording unit serves the recording of a customer request. A display device serves the display of a price for the recorded customer request. A payment transaction is recorded by means of a second recording unit. A baking device serves the baking of raw dough pieces pursuant to the customer's request to ready-baked dough pieces. The ready-baked dough pieces are made available in at least one supply bin that is accessible to the customer. Two delivery units serve the delivery of the raw dough pieces and/or of the ready-baked dough pieces from the first supply bin to the baking device and/or from baking device to the second supply bin. Depending upon the data recorded by the recording units, a control unit controls the delivery units and the baking device. The result is a device and a method that can be applied by means of it and operated in a cost-efficient way for the production and the sale of dough pieces.

    • A baking oven comprises a feeding portion having a feeding aperture for introducing dough pieces, a baking chamber and a discharge portion having a discharge aperture for removing dough pieces. In addition, a circulating air unit is provided which comprises a circulating air source generating a circulating air flow, a circulating air heating means and a circulating air guiding channel a part of which is formed by the baking chamber. A plurality of receptacles for dough pieces are mounted in the baking chamber to be freely rotatable or pivotable around a horizontal rotation or pivot axis. The rotation or pivot axes of the receptacles are located higher than the centre of gravity of the receptacles even if the receptacles are filled with dough pieces. As a result, a baking oven is provided in which the dough pieces can be distributed as evenly as possible and moved along during the baking process.

To this end, the conveyor assembly comprises a plurality of continuous conveyor belts which pass along deflection pulleys and are disposed one in relation to the other in the baking chamber for transfer by gravity of the dough pieces from one to another of two adjacent continuous conveyor belts. The result is a baking oven in which, during baking, the dough pieces can be moved and spread as uniformly as possible.

A first one of the at least two baking zones is configured so that a plurality of dough pieces available and conveyed on the supply side as bulk material is being baked there. A second one of the at least two baking zones is configured so that a plurality of dough pieces which are available and conveyed as individual pieces are being baked there. More-over, baking oven is provided with a circulating air source and a means of conveyance for conveying the dough pieces from the supply inlet through the baking chamber to the delivery outlet. A baking system with such a baking oven is furthermore provided with an upstream means of conveyance for conveying dough pieces to the baking oven. The result is a baking oven and a baking system equipped with the same by means of which during baking different requests of the customers can be flexibly complied with.
