      본 발명은 용해성 및 발색성이 개선될 뿐만 아니라 식품에 적용될 수 있도록 안정성이 확보된 락색소를 제공함으로써 고가품 쪽에 사용되는 코치닐 색소를 대체하여 시장 경쟁력을 확보함과 동시에 균등한 품질의 저가 색소제를 시중에 제공할 수 있는 효과를 가진다. 또한 본 발명에 따라 제조된 락색소는 기존 락색소에 비해 산성 음료 등에 용해성이 매우 우수하며, 색조 또한 더 붉은 색조로 발색되는 효과를 가진다.
