    • The present invention relates to method for separating and extracting ovotransferrin from egg whites using an eco-friendly extraction technique, and the method comprises: a stirring step (first step) for mixing egg whites with distilled water at a one to one ratio and stirring; a supernatant obtaining step (second step) for adjusting the acidity of the mixture stirred in the first step to pH 4.0-6.5 by mixing with citric acid or hydrochloric acid, and removing ovomucin by centrifugation, then obtaining the supernatant; a precipitate obtaining step (third step) for obtaining precipitate by mixing the supernatant obtained in the second step with citric acid and ammonium sulfate and storing at 2-7°C, then centrifuging the mixture; a salt removing step (fourth step) for dissolving the precipitate centrifuged in the third step in distilled water and then removing salt; and a final precipitate obtaining step (fifth step) for obtaining the final precipitate by mixing the precipitate, of which the salt is removed, with citric acid and ammonium sulfate and storing at 2-7°C, then centrifuging the mixture. The method for separating and extracting ovotransferrin from egg whites using an eco-friendly extraction technique according to the present invention uses low concentration citric acid and ammonium sulfate, not organic solvents, to separate and extract high-yield and high-purity ovotransferrin so the separation process is simplified and time for separation is shortened, thereby enabling more effective mass production and an increase in added value in poultry farming.
