    • Provided are a method for preparing fat and oil which is improved in the purity and content of diacyl glycerol, and the fat and oil prepared by the method which is rich in diacyl glycerol. The method comprises the steps of reacting an acyl group donating material and an acyl group receiving material; separating unreacted materials and by-products by distillation; and re-using the remaining one after distillation as some part of a reactant, wherein the fat and oil contains 0.5-15 wt% of monoacyl glycerol after the distillation. Preferably the acyl group donating material is triacyl glycerol, a fatty acid or a low molecular weight alcohol ester of fatty acids; and the acyl group receiving material is glycerin. Preferably the distillation is carried out at a pressure of 2-300 Pa and at a temperature of 180-280 deg.C for 0.2-30 min.

    • PURPOSE: To provide an effective method of separating a saturated fatty acid and an unsaturated fatty acid from a mixture of fatty acids by a natural separation method using a polyglycerol fatty acid ester. CONSTITUTION: In this manufacturing method of a saturated fatty acid and an unsaturated fatty acid, the saturated fatty acid and the unsaturated fatty acid are separated by adding and mixing a polyglycerol fatty acid ester to the feed fatty acids, then cooling to deposit a crystal. The cooling operation is carried out with a cooling rate of not higher than 4°C/h at not lower than 60% supersaturation and the cooling rate is changed in the middle of the cooling. Through the method, the saturated fatty acid and the unsaturated fatty acid in the raw material fatty acids can be naturally separated easily and efficiently.
