    • PURPOSE: A process and equipment for drying persimmons through a combustion procedure for producing and supplying a low cost reducing gas and using a hot air heater and a dehumidifier for maintaining a temperature and humidity in an optimum state are provided. Therefore, the process reduces the aging and drying period of the persimmons by 1/4 and permits maximization and unification of production efficiency to be achieved. CONSTITUTION: A drying rack on which persimmons are hung is introduced into a drying apparatus, a reducing gas is supplied to the drying equipment for 4 to 5 days from the upper part thereof to remove the astringency from persimmons. Then, the aged persimmons are dried at 25 to 35 deg.C for 5 to 7 days by the operation of a hot air heater in the daylight, but at a temperature of 5 to 10 deg.C and a humidity of 20 to 40 % by the operation of dehumidifier without the hot air heater at night. The reducing gas is recycled and comprises 4.5 % by volume or less of O2, 9.00 % by volume of CO2 and 5,000 ppm CO.
