    • A gene encoding glutathione synthetase from Candida utilis is provided, thereby cheaply producing yeast extract using Candida utilis which is grown by using the glutathione synthetase and gamma-glutamylcysteine synthetase genes, does not produce ethanol as a by-product under strictly aerobic condition, and has high content of gamma-glutamylcysteine. A DNA encoding a protein having (A) the amino acid sequence of SEQ ID NO: 2; or (B) the amino acid sequence of SEQ ID NO: 2 including substitution, deletion, insertion or addition of one or more amino acids, and glutathione synthetase activity is provided, wherein the DNA (a) comprises 58th to 1485th nucleotides in the nucleotide sequence of SEQ ID NO: 1; or (b) is hybridizable with the DNA comprising the 58th to 1485th nucleotides in the nucleotide sequence of SEQ ID NO: 1 or a probe that can be prepared therefrom under stringent conditions, and encodes a protein having glutathione synthetase activity. A microorganism Candida utilis which is modified by the DNA to have glutathione synthetase activity of 0.003 micromol GSH/mg protein per hour or less is provided.
