    • PROBLEM TO BE SOLVED: To provide a technique for acquiring a new lactic acid bacterium that is simply cultured, reaches intestines by orally intaking and is expected to prevent diabetes.SOLUTION: The lactic acid bacterium produces a substance that has inhibitory activity against amylase derived from an animal pancreas and thermostability. A solution prepared from an α amylase that is derived from an animal pancreas and has optimal concentration and starch having optimal concentration is added to each well of a microplate and supernatant culture solutions of a plurality of lactic acid bacterium strains derived from turnip are added to each well by one strain. After optimal reaction time, the lactic acid bacterium can be selected on the basis of color development of iodine starch reaction.
