    • PROBLEM TO BE SOLVED: To provide a food material using rice as a starting material, which is sufficiently available as a substitute from the standpoint of cost at the commercial level, to provide a processed food using the same, and to provide a method for the production thereof.
      SOLUTION: Rice grains 1 are soaked in water 2 to give a rice soaked liquid 3 and the rice grains 1 are allowed to absorb water in this state. The whole rice soaked liquid 3 is fed into a mill and milled therein. Thus, water-absorbed fine rice grains 10 are obtained. These water-absorbed fine rice grains 10 are characterized by being a rice paste 5 wherein free water 20 occupies the space among the fine rice grains 10. Thus, the fine rice grains 10 in the rice paste 5 can be fine. Owing to the action of the free water 20 in the course of milling, heat denaturation of components can be prevented. The fine rice grains can be maintained in the water-absorbed state, which makes it possible to avoid damage of the rice grains 10 (simple starch grains) caused by drying. Moreover, the free water 20 improves the compatibility of the rice paste 5 with a kneaded matter comprising a cereal flour of a different kind or other materials, which facilitates the mixing of these materials.
