    • PROBLEM TO BE SOLVED: To provide modified milk powder excellent in a storage stability, in which substantially only casein is combined as a protein source.SOLUTION: A method of the production of the modified milk powder, which contains the casein, a succinic acid monoglyceride, lipid, and an emulsifier other than the succinic acid monoglyceride, wherein the casein is 95 mass% or more of a total protein, includes: a process for mixing the casein and the succinic acid monoglyceride to prepare a succinic acid monoglyceride-added casein solution; a process for mixing the lipid and the emulsifier other than the succinic acid monoglyceride to prepare an emulsifier-added lipid mixture; a process for mixing the succinic acid monoglyceride-added casein solution and the emulsifier-added lipid mixture to prepare an emulsion; and a process for mixing the emulsion and saccharides to prepare a milk formula liquid which is then dried to manufacture the modified milk powder. The modified milk powder manufactured by the method is also provided.
