    • PROBLEM TO BE SOLVED: To provide a carbohydrate intake restricting diet material restricting carbohydrate intake without mixing milk component (milk sugar) increasing carbohydrate so as to be the carbohydrate intake restricting diet material, and made of only highly safe ingredients even if used regularly for a long period: to provide edible dough to be used for noodles, rice cake or wrap skin of steamed bean-jam bun, confectionery dough, fermented dough or bread, made of the carbohydrate intake restricting diet material: and to provide a method for producing the carbohydrate intake restricting diet material. SOLUTION: This carbohydrate intake restricting diet material contains as the essential ingredients, low methoxyl pectin (LM pectin) of a methoxyl group content less than 7 wt.%, wheat husk powder, and gluten such as wheat gluten. The mixing weight ratio of the gluten to the wheat husk powder is (8:2)-(4:6). The method for producing the carbohydrate intake restricting diet material includes producing dough by mixing to bring the mixing ratio of an aqueous solution containing 1-3 wt.% of low methoxyl pectin of a methoxyl group content less than 7 wt.% to (6:4)-(3:7) in a weight ratio, to the total amount of the wheat husk powder and gluten such as wheat gluten. Since calcium ion and magnesium ion richly contained in the wheat husk powder are used as bivalent metallic ion required when the LM pectin is gelatinized to demonstrate water retentivity and thickening properties, it is no need to add ingredients which invite an increase of carbohydrate, such as milk component (containing milk sugar and calcium ion).
