摘要： PROBLEM TO BE SOLVED: To provide a method for producing a seasoning liquid, by which the seasoning liquid having a high nitrogen content, an excellent taste and a new flavor can efficiently and easily be obtained, by mixing a tomato juice with a malt, degrading, fermenting and aging the mixture, and then separating the liquid from the solids. SOLUTION: This method for producing a seasoning liquid comprises mixing (A) a tomato juice or its concentration product with (B) a malt, subjecting the mixture to degradation, fermentation and aging treatments, and then subjecting the product to a solid-liquid separation treatment. The components A and B are preferably mixed in an A/B weight ratio of about 1/1 to 3/1. The component A is preferably a tomato juice product prepared by treating the centrifugation supernatant of the tomato juice with a precise filtration membrane or ultrafiltration membrane and then concentrating the permeated liquid. The component B is preferably a malt obtained from one or more raw materials selected from the group consisting of soybeans, wheat, rice and gluten by the use of Aspergillus oryzae or Aspergillus sojae. The degradation, fermentation and aging treatments are preferably carried out in the presence of salt.
