CONSTITUTION:A cereal food or a processed cereal food (e.g. cooked rice and pasta) is incorporated or surface-treated with a water-soluble hemicellulose as a loosening agent. The cooked cereal food treated with the agent has improved loosening property and is free from aggregation of the food to form a lump even in cooled state. The frozen food or retort-cooked food treated with the agent is easily recookable owing to the improvement of the loosening property to get a food having excellent palatability.

摘要： PROBLEM TO BE SOLVED: To obtain a water soluble hemicellulose extremely excellent in limpid property and easy to use by extracting the water soluble hemicellulose with an aqueous medium from a raw material containing the water soluble hemicellulose, concentrating the extract liquid and removing insoluble substances therefrom. SOLUTION: This water soluble hemicellulose is obtained by extracting the water soluble hemicellulose with an aqueous medium from a raw material containing the water soluble hemicellulose originated from preferably a soybean at preferably 80-140 deg.C and pH 2-1, then concentrating the extract liquid by preferably >=1.5 fold concentrating ratio, and then removing insoluble substances therefrom. It is preferable to remove a hydrophobic substance or a low molecular weight substance from the extract liquid by an active carbon treatment, a resin adsorption treatment or the like. For removing the insoluble substance, it becomes easily separatable by heating the concentrated liquid preferably at >=50 deg.C and leaving as standing still for >=1 hr. As the other additive elemental material, a dextrin, a glue plant, an agar, an emulsifying agent and a fatty acid soap, etc., as an antifoam agent can be blended.
