    • PURPOSE:To suppress the energy consumption in the fermentation process, by recovering and utilizing the heat of the fermentation reaction and the latent heat of vaporization of the fermentation product. CONSTITUTION:A prefermentation tank 2 for the fermentation at a high rate, is charged with yeast from the yeast tank 1, and the fermentation is carried out. A part of the fermented liquid is introduced into the flash evaporator 5 through the liquid circulation line 4, and the fermentation product such as ethanol is evaporated under reduced pressure. The residual fermentation liquid is returned to the prefermentation tank 2. When the fermentation in the prefermentation tank 2 proceeds to a certain degree, the liquid is transferred to the post-fermentation tank 6 for the slow fermentation such as ripening of the unrefined product, and the ripening of the fermentation product is carried out. The vapor generated in the flash evaporator 5 is sent to the intermediate cooler 9, condensed by the heat-exchange with the ripened product sent from the post-fermentation tank 6 through the line 16, and collected in the unrefined product tank 18. The ripened product in the post-fermentation tank 6 is heated by the heat- exchange, charged to the unrefined product tank 18, and distilled.
