摘要： A food processing device (10) includes a drive assembly coupled to a dualaction cutting tool (20) and a single-action dicing tool (40). First and second cutting assemblies (51, 52) are disposed on the cutting tool (20) and are adapted to make first and second cuts in a food substrate as the cutting tool (20) rotates within a food processing path (26). The cutting tool (20) is further adapted to urge the cut food substrate towards and through the dicing tool (40) where generally parallel spaced-apart blades (66) further cut the food substrate to form diced food elements. The sequential cutting arrangement of the cutting tool (20) and the dicing tool (40) provides for a food processing device (10) that is capable of dicing a food substrate with lower torque and lower power requirements as compared to conventional dicing methods.

A support bar supports the shear plate, and a feature is provide for adjusting the proximity of the first shear edge relative to the knives of the cross-cutter.

The handle is provided on the slicing cutter disk for facilitating to detach the slice cutter disk for cleaning, and a through-hole is defined in the dicing cutter disk for facilitating to detach the dicing cutter disk for cleaning, which are easy to use and easy to clean. The block makes the slicing cutter disk not shake too much when rotating, thereby having good effect of dicing.

The disclosed system and method involves a two or three stage application of a liquid cryogen or carbon dioxide snow to cool the food product. The apparatus comprises a rotary knife wheel (32) having at least one knife blade (38). The shaft (32) and the disc (42) may be separate components and the disc may be keyed to the shaft so as to be slidable thereon. Means (36, 44) may be provided for adjusting the position of the disc (42) along the shaft (32) in order to adjust the thickness of cut of the products.
