摘要： A method for processing vegetables comprises (i) a dicing step comprising subjecting the vegetable to mechanical size reduction; (ii) a softening step comprising heating or freezing the vegetable for a pre-determined period; and (iii) a treatment step comprising bringing the softened vegetable product into contact with one or more reactive oxygen species. The reactive oxygen species may be a peroxide, superoxide or ozone. Preferably the method is used for processing cauliflower into a low-carbohydrate substitute for rice. The treatment prevents discolouration and minimises the production of malodorous volatile chemicals.

摘要： A process for manufacturing dry sausage. The process includes preparing a dry sausage meat mixture, stuffing the mixture into a casing or mould, fermenting the mixture, heat treating the mixture, cooling the mixture to a temperature sufficiently low to permit slicing, slicing the sausage, placing the sausage onto a conveyor, and passing the conveyor and sausage through a chamber. The process also includes introducing a supply of conditioned air into the chamber, the air having a relative humidity below about 60% and a temperature in the range of at least about 40°F to 130°F, and introducing a supply of microwaves into the chamber. The air supply and microwaves are selected to reduce the moisture content of the meat to a predetermined moisture to protein ratio.

The method comprises applying a composition comprising a microwave attractant to the plant material; and then drying the plant material while exposing the plant material to microwave energy, wherein the microwave energy heats the plant material to a temperature effective to inactivate the majority of any browning enzymes in the plant material, and wherein the microwave attractant results in the heating of the plant material occurring at a rate whereby browning of the plant material by the browning enzymes during heating is substantially prevented. Also disclosed are uses of the preserved plant material.
