    • The invention relates to a seafood product processing installation which is intended, in particular, for the processing of prawn- or lobster-type shellfish using at least one suitable processing liquid. The inventive installation comprises: at least one processing post which is equipped with means (2) for applying the processing liquid to the seafood products, and means (3) for transferring said products such that they are conveyed through the aforementioned processing post(s). According to the invention, the installation contains at least one processing post comprising processing liquid-application means (2) having a structure which extends above the product-transfer means. Moreover, the aforementioned structure is equipped with a plurality of perforations (8) which are used for the sprinkle distribution of the processing liquid, said perforations (8) occupying a horizontal or essentially-horizontal surface which defines the product-processing surface (15). In a preferred embodiment of the invention, the above-mentioned processing liquid application means (2) comprise means (4) for supplying processing liquid to a watering tray (5) which is formed by a base element (6) that is surrounded by walls (7), said base element (6) being equipped with a plurality of perforations (8) which enable the even sprinkling of the processing liquid on the products to be processed.

    • Es werden ein Verfahren und eine Vorrichtung zum automatischen Auftragen einer viskosen Flüssigkeit, vorzugsweise einer Marinade, auf stückiges Lebensmittelgut offenbart, die ein einfaches, schnelles und kontinuierliches Auftragen der viskosen Flüssigkeit auf das stückige Lebensmittelgut ermöglichen.
      Das Verfahren zeichnet sich dadurch aus, daß die viskose Flüssigkeit auf die Manteloberfläche (105, 205) einer Auftragwalze (104, 204) aufgebracht und die so mit der viskosen Flüssigkeit versehene Manteloberfläche (105, 205) zur Übertragung der Flüssigkeit über das stückige Lebensmittelgut gerollt wird.
      Die Vorrichtung hat eine Fördereinrichtung (102, 202) zum Fördern des stückigen Lebensmittelgutes in eine Förderrichtung (F 1 , F 2 ); einen Antrieb für die Fördereinrichtung (102, 202); eine eine Manteloberfläche aufweisende Auftragwalze (104, 204), die derart oberhalb der Fördereinrichtung (102, 202) quer zur Förderrichtung (F 1 , F 2 ) angeordnet ist, daß auf der Fördereinrichtung (102, 202) unter der Auftragwalze (104, 204) hindurch geführtes, stückiges Lebensmittelgut mit der Manteloberfläche in Kontakt kommt; einen Antrieb (107, 108, 207, 208) für die Auftragwalze (104, 204) und ein oberhalb der Auftragwalze (104, 204) so angeordnetes Reservoir (106, 206) für die viskose Flüssigkeit, daß bei rotierender Auftragwalze (104, 204) Flüssigkeit aus dem Reservoir (106, 206) auf die Manteloberfläche der Auftragwalze (104, 204) übertragen wird.

    • A system and method for applying brine solution to food pieces, such as potato chips, allows application of brine solution to a continuous stream of food pieces in a brine bath, while maintaining a continuously refreshed supply of brine solution in the brine bath, but without requiring that the used brine be discharged as effluent. Food pieces are washed in a water bath and then deposited, with an amount of surface water carried on the washed slices, into a brine bath tank. The brine bath tank has a predetermined volume of brine solution at a predetermined concentration of brining substance in the solution. The food pieces are marinated in the brine bath so as to thoroughly wet the pieces and are then removed from the brine bath tank with an amount of surface solution carried on the slices. The amount of surface solution carried on the marinated slices is greater than the amount of surface water carried on the washed, pre-marinated slices. Brine solution and/or salts are continuously added to the brine bath tank to maintain a specified volume and concentration of brine solution within the brine bath tank. The amount of brine solution that is removed from the brine bath tank is about equal to the amount of fresh brine solution and/or salts that are added to the tank, so that the entire volume of brine solution within the brine bath tank is replaced after processing a predetermined amount of food pieces through the brine bath tank. A microbicide may be added to the brine bath tank to prevent microbial growth within the tank, and the brine solution may be filtered to remove filterable contaminants therefrom.
