    • PROBLEM TO BE SOLVED: To provide a method for producing germinated brown rice extract by which rice-fermented extract more richly containing amino acid or vitamins and having higher functionality than a conventional rice-fermented product or germinated rice placed on the market is produced, and which comprises using humic water to prevent rot of fermenting germinated brown rice and extract, reduces production costs owing to energy saving, and is environmentally friendly. SOLUTION: The method for producing germinated brown rice extract comprises: soaking germinated brown rice in humic water without heating treatment; and fermenting the germinated brown rice via enzyme of the germinated brown rice in its own at normal temperature (30°C for example). Another version of the method comprises: adding spores of Aspergillus oryzae (sprout) to the germinated brown rice without heating treatment to form the brown rice into malt; soaking the malt in humid water; fermenting malt liquid at a normal temperature (30°C for example) so as to increase the amount of the amino acid such as γ-amino lactic acid due to fermentation force of the enzyme of the germinated brown rice of its own and fermentation force of the malt.
