    • The invention provides a method of estimation milk rennet coagulation properties and methods of generating cattle population, producing milk with modified coagulation properties. Milk with modified coagulation properties produced using the methods and cattle population of the invention has average curd firmness (E30) above 34.75 mm and average coagulation time (R) less than 7.2 min. Invention provides a method of generating a cattle population by assessing firmness of curd and coagulation time at least 3 times during the whole lactation and by using Legendre polynomials estimate the level of these traits within lactation. Individual coagulation curves of E30 and R are obtained and comparing average level with reference level, cows, bull dams and sires (on the basis of their daughters) with desired milk coagulation properties are identified. Invention provides a method of identification of cows; bull dams and sires producing the whole lactation milk with average firmness of curd above 30.43 and below 26.07 mm using ?-casein genotypes.
