    • PURPOSE: A composting method of food waste and a compost manufactured by using the method are provided improve effect of the compost by primarily using anaerobes and secondarily using aerobes in a fermentation process. CONSTITUTION: A composting method of food waste comprises an intake step, screening step, dehydration step, a first fermentation step, and a second fermentation step. The first fermentation step manufactures a first immature compost, and the second fermentation step manufactures a second complete compost. The first fermentation step ferments dehydrated food wastes in an anaerobic fermentation tank and reduces a moisture content to 45-50%. The anaerobes in the anaerobic fermentation tank are Lactobacillus, Staphylococcus, Streptococcus, Pseudomonas, and Enterobacter. The second fermentation step ferments the first immature compost in a aerobic fermentation tank and reduces the moisture content down to 7-10%. The aerobic microorganisms in the aerobic fermentation tank are Saccharomyces, Bacillus which are heat resistant spore bacteria, Aspergillus which are filamentous fungi, and Streptomyces.
