The sides of pigs are skinned as they are drawn by engaging pins 31 over a drum 4 rotated'against a skinning knife 21. Each side, skin down, is placed on a table 40, 41 which is tilted automatically to slide the side into contact with the pins 31 to dotted line position 51 as the pins 31 in a drum notch 29 rotate into skin penetrating position, such tilting being done by push springs 45 which rock the table 40 &c. about pivots 43 when the flat part 50 of a rotated cam 49 permits the cam roller 48 to yield to the right. The knife 22 is then allowed to be lowered into contact with the skin by cams 52 operating on a roller 28 on the pivoted knife end supports 20, this being done in timed relation with the position of the drum 4 by a press down spring 27. The flesh is pressed down on the drum 4 by rolls 16 yieldingly mounted on leaf springs 13 limited in movement between screw stops. After skinning, the cam 49 restores the table 40, 41 to receiving position.
