    • A vessel for cooking food under pressure wherein the shape of a bottom surface of the vessel and the position of heating elements which heat cooking fluid contained within the vessel act to form a cool zone in a region near the bottom surface. Within the cool zone, the temperature of the cooking fluid is maintained below the cooking temperature so that food particles dislodged from the food being cooked do not burn and contaminate the cooking fluid. In addition, the temperature in the cool zone is maintained above the boiling point of water so that moisture contained within the food particles is continuously evaporated during the cooking cycle, preventing boil over conditions. A novel pressure release system is provided for intermittently operating a pressure release valve near the end of the cooking cycle. A computer controller controls operation of the release valve based upon the temperature of the cooking fluid to eliminate sudden drops in temperature.

    • A machine to fast cook individual servings of spaghetti and the like, particularly spaghetti which has a microscopic bore through the center of each strand, comprises a pressurized boiler to heat water to a temperature of about 155 degrees Celsius under pressure of about 7 atmospheres or about 105 psi, a first cooking chamber to receive an individual serving of spaghetti for cooking and to thereafter receive the heated and pressurized water from the boiler to cook the spaghetti for about thirty seconds, a second cooking chamber to which the partially cooked spaghetti is then transferred through a conduit whose passage is controlled by a food transfer valve for further cooking in water at a temperature of about 90 degrees Celsius for a duration of about twenty seconds. The second cooking chamber is in the lower part of a housing which includes an expansion chamber above the cooking chamber, such expansion chamber enabling the pressurized water from the first cooking chamber to decompress, vaporize and escape through a discharge outlet. The bottom of the second cooking chamber has a hinged lid which opens after water has been drained therefrom to deposit the cooked spaghetti on to a serving plate.

    • A large capacity pressure cooker heated by a pair of radiant burner units utilizing a gas/air mixture. The pressure cooker has a cabinet containing a large pot charged with a predetermined amount of cooking oil. The pot has sides, front and rear walls terminating at their lowermost edges in a bottom. The pot top extends partway above the cabinet and is provided with a removable pressure-tight lid. An insulated shell fully surrounds and is sealed to the pot intermediate its top and bottom. The shell supports the burners in parallel spaced relationship to the pot sides. The burners extend beyond the front and rear edges of the pot sides. Horizontal baffles within the shell divide the shell into a combustion chamber for each burner and flue passageways above each combustion chamber. The combustion chambers are separated from each other by vertical baffles at the front and rear of the pot. The flue passageways are similarly separated from each other at the front of the pot and are connected to a flue at the rear of the pot. Each combustion chamber is connected to its respective flue passageway at the front of the pot so that products of combustion circulate to the front of the pot in the combustion chambers, enter the flue passageways and circulate to the rear of the pot, entering the flue.

    • A pressure interlock means to prevent release and opening of the cover under a potentially dangerous condition. The cooking apparatus is formed including a suitable open-top pot having a top cover unit secured to open and close the pot. Cooking oil is contained within the pot to a suitable depth or level spaced from the pressure cover unit. A pressurized deep oil cooker has a cover unit and includes a clamp bar pivotally connected to one side of a cooking pot. A mechanical hook unit couples a hook member on the free end of the bar to a pin. A plate cover has a D-shaped seal in a dovetail groove and abutts the upper edge of the pot. The cover is secured to the cam by a slotted connection permitting limited movement of the cover relative to the bar. A cam unit is coupled to the bar and has a rotating cam having a release position in which limited movement of the cover is permitted and a locking position which spreads the clamp bar relative to said cover to seal the cover and set the latch. A pressure sensitive piston in the cover moves into the path of a pin on cam operating handle to prevent to release with a pressure in the pot. An electrically operated pressure relief releases the pressure at the end of a cooking cycle.

    • A pressure vessel such as a steam cooker has a novel variably sloped cam arrangement for sealing a warped access door against the inside of an access opening. Such access openings are typically of circular configuration, and the access doors are warped about one axis for insertion therethrough. The latching mechanism of this invention enables the door to be swung from an open position into a first position inside the pressure vessel and then to be moved rapidly into a second position in engagement with an inside rim of the access opening. This rapid movement is accomplished by rotation of an operating handle through a relatively small angle. Thereafter continued rotation of the handle stresses the access door, removing the warp therefrom and sealing the door against the inside rim of the access opening. The latter door stressing rotation produces relatively little motion of the door for a relatively large angular rotation of the operating handle. Thus there is achieved a relatively large mechanical advantage during the actual stressing of the door, while minimizing the amount of operating handle rotation required during that portion of door movement wherein a large mechanical advantage is not necessary.There is further disclosed a novel shift plate arrangement which causes both rectilinear and angular shifting of the access door during movement between the above mentioned first and second positions. This avoids manual shifting of the door and enables door latching by merely swinging the door into the closed position and actuating the operating handle. Door opening is accomplished by a sequence which is the reverse of the latching sequence.
