Starch. - To extract starch from potatoes, they are reduced to chips or fine slices or the like, instead of being pulped, and these are washed with potato juice in its natural state or more or less concentrated, only a partial extraction of starch being attained or aimed at. The resulting highly concentrated liquor is used for enriching the end product, a nutritious food-stuff being stated to be so obtaiaed. Only the starch granules belonging to the uncovered cells on the surfaces of the chips pass into the washing juice-that is, not more than 40 per cent, and preferably only 33 per cent, of the starch present depending upon the thickness of the chips and quantity of juice employed. The starch is separated as usual by precipitation or filtration. The juice is extracted from the partly extracted chips in presses or the like, and is used repeatedly for washing the chips. The surplus juice thus introduced is removed after deprivation of suspended starch. In a modification, evaporated concentrated juice, which can first be deprived of its albumen as usual, is employed for washing out the starch, giving an enriched food-stuff. From a slicing-machine a the chips or slices enter the hopper b of a tank c to be mixed, preferably by an agitator, with relatively large quantities of washing-juice supplied through a pipe e from a pump m. From the other end of the tank c the chips are carried by a conveyer f to a press p, the juice running back through the sieve bottom s of the conveyer. The juice squeezed out in the press p is also run back through a channel q to the tank e. The juice passes from the tank c through an overflow pipe i to a depulper j, and thence to a starch-separating apparatus k of any suitable construction. The-separated juice is then drawn off through a pipe l by the pump m and returned to the front end of the tank c. Surplus juice overflows through a pipe o to, for example, an evaporating-battery &c. The pressed potato material passes away from the press p through a gutter t. Ordinary sifting-drums, shaking sieves, or the like may be used with washing- juice, repeatedly used, instead of the mixing-tank for washing the starch from the chips.
