    • 대왕오징어를이용한튀김용가공식품제조방법이개시된다. 본발명의대왕오징어를이용한튀김용가공식품제조방법은, a) 대왕오징어를해동한후 소정의크기로절단하는준비단계; b) 해동된상기오징어육의표면조직이단단해지도록 100℃ ~ 130℃의끓는물에 3 - 7분간데친후 0℃의냉수에침지하여급속냉각하는표면조직경화단계; c) 표면조직경화단계를거친오징어육의외피를벗기는탈피단계; d) 외피가벗겨진오징어육을소정의크기로절단하는절단단계; e) 소정의크기로절단된오징어육을녹차분말과물을 1 : 24 비율로혼합한녹차혼합물에 10 ~ 14시간동안침지하여오징어육에함유된염분및 쓴맛과신맛을내는염화암모늄을제거하는 1차불순물제거단계; e) 1차염화암모늄제거단계를거친오징어육을 100℃ ~ 130℃의끓는물에 20 ~ 30분간삶아오징어육에함유된수분과염분및 염화암모늄을제거하는 2차불순물제거단계; f) 상기제2차불순물제거단계에서끓는물에삶아진오징어육을조직이단단해지도록냉수에침지하여급속냉각하는조직경화단계; 및 g) 상기조직경화단계를거친오징어육의표면에양념을묻혀튀김옷을입히는양념단계를포함하는것을특징으로한다. 본발명에의하면, 대왕오징어를데치고삶는과정을통하여화학약품을사용하지않고도대왕오징어에함유된염분과염화암모늄을제거할수 있을뿐만아니라, 짠맛과신맛등이제거된대왕오징어를이용하여용이하게튀김용가공식품을제공할수 있음으로써대왕오징어로만들어진가공식품을대중화시킬수 있는효과를제공할수 있게된다.
