    • A patty forming machine includes a frame structure supporting a compartment which encloses a mechanical reciprocating device, the compartment having a front wall. A mold plate locate outside of the front wall includes cavities for receiving food product for the formation of patties. At least one drive rod having a circular cross-section penetrates the front wall and connects the mold plate to the reciprocating device. The machine also includes a vacuum bar assembly having a vacuum bar for interleaving flexible paper sheets with formed patties. The vacuum bar is driven by a reciprocating rod having a round cross-section and penetrating through the front wall of the housing to operatively connect the vacuum bar to the reciprocating device. The frame structure of the machine is underlied by a bottom skin which is spaced below a horizontal frame to provide an access gap for clear viewing and maintenance of a top of the bottom skin.

    • An improved orifice plate assembly for a loaf slicing machine, the orifice plate assembly located adjacent to a moving slicing blade includes a frame defining an opening and a first orifice-defining member and a second orifice-defining member slidably mounted together slidably on the frame. The first orifice-defining member and the second orifice-defining member, together define an orifice. An adjustment mechanism is operatively connected to the frame and to each of the first and second orifice-defining members, the adjustment mechanism when adjusted changes the orifice dimension between the first and second orifice-defining members without substantially changing a centerline location of the orifice. The adjustment mechanism includes a stud fixed to the first orifice-defining member, and two links pivotally mounted to the frame and engaged to two rods fixed to the second orifice-defining member. The stud is engaged to one end of the links and the rods are engaged to a respective other end of the links such that a movement of the stud inwardly pivots the links to draw the second orifice-defining member toward the first orifice-defining member.

    • A sealing arrangement is provided for a product weigh scale for a food processing apparatus the weigh scale including a support for supporting a product, a member that carries the support, and a weight sensor that senses vertical load on the member. The sealing arrangement includes a seal surrounding the member beneath the support, the seal having a first sealing surface configured to be sealed against a cabinet, and a second sealing surface. The seal is movable between an inactive position wherein the second sealing surface is out of contact with the support and a sealing position wherein the second sealing surface seals against the support. The seal includes a stationary part having the first sealing surface and a sliding part having the second sealing surface. A plurality of springs urge the sliding part toward the sealing position and a source of pressurized fluid is injected between the sliding part and the stationary part to urge the sliding part toward the inactive position. The pressurized fluid has a sufficient pressure to overcome the urging of the springs and maintains the sliding part in the inactive position during normal operation of the scale, wherein upon loss of the supply of pressurized fluid, the springs cause the sliding part to assume the sealing position.

    • A drive system reciprocates a mold plate between a cavity fill position and a patty discharge position, and can also reciprocate knock out plungers to discharge molded food patties from cavities in the mold plate at the patty discharge position. This drive system includes a first electric motor; a first rotary-to-linear motion converting apparatus operatively connected to the first electric motor; at least one drive member operatively connected between the first rotary-to-linear motion converting apparatus and the mold plate to reciprocate the mold plate. The drive system can also include a second electric motor; a second rotary-to-linear motion converting apparatus operatively connected to the second electric motor; and at least one knock out member operatively connected between the second rotary-to-linear motion converting apparatus and the knock out plungers, to reciprocate the knock out plungers. The first and second motors are precisely controlled to control and synchronize the movements of the mold plate and knock out plungers. The drive system can also include a control over a plurality of valves in a mold plate breather air pumping system.

    • A tube valve and manifold arrangement for switching food product pumps is incorporated into a molding machine. The tube valve includes either a central outlet or two selectable sets of progressively sized outlet openings, with the smallest outlet opening closest to the active plunger, and the largest opening furthest from the active plunger. The tube valve includes grooves or depressions formed on its outside surface. The depressions are oriented to be at least partially open to the pump cavity that is not actively filling. Grooves and bores are in fluid communication with the depressions to allow air trapped in the off line pump cavity to be expelled to the hopper. The tube valve mounting assembly includes inboard and outboard bushings located externally on opposite lateral sides of the valve manifold that are removably fastened to the outside of the valve manifold.
