Preserving milk.-In the sterilization of milk, the preliminary heating and other treatment, the sterilization proper, and the subsequent cooling and other treatment are conducted in different parts of the apparatus, which are so connected and arranged as to provide for continuous working. The milk is supplied from a tank 1 to a heater 2, in which it is stirred and heated to 50‹ C. and, it may be, otherwise treated. It is then transferred from the heater 2 to the sterilizing- vessel 3 by opening the cocks 6, 8, and is heated first to 100‹ C. and subsequently to 128‹ C., the cocks 6, 8 being closed at the former temperature. During this part of the process, the milk is kept in motion by an agitator 9. The sterilized milk is discharged by steam pressure into the cooler 4 by opening a cock 7. The outlet pipe 10 is curved, as shown, and can be adjusted so as to prevent the whole of the milk from being drawn off and the walls of the vessel from being laid bare.
