    • The invention provides a beverage extractor permitting extraction of a beverage of high quality irrespective of its type. The extractor is provided with a first extraction channel for letting the beverage extracted in a cylinder flow into the extraction pipe via beverage outlet holes of a second piston having a prescribed first bore and a second extraction channel via a communication hole having a prescribed second bore, which is smaller in bore than the outlet holes, for letting the beverage extracted in the cylinder flow into the extraction pipe, and the first and second extraction channels are switched over between each other by the movement of the second piston. This makes it possible to select an extraction channel suitable for the type of beverage, whether regular coffee or espresso coffee, and accordingly to extract a beverage of high quality irrespective of the type of beverage.

    • An improved structure of brewing chamber of a coffee machine is disclosed by setting an intercepting device in an extracting pipe of a traditional brewing chamber of a coffee machine and two draining through-holes into the bottom of the traditional brewing chamber. Due to the intercepting device, the extracted coffee liquid coming from the brewing chamber can be drained off the extracting pipe with a stable speed and the coffee grain in the brewing chamber can be extracted in the conditions with an average extracting time and an average extracting pressure, and all that promote the extracting and tasting quality of the coffee. Besides, by the two draining through-holes, after all the extracted coffee liquid has been drained off the extracting pipe, the residual liquid in the brewing chamber can be drained off the brewing chamber smoothly to keep the next time extracted coffee liquid fresh.

    • A brewing apparatus has a brewing cylinder (1) with a cylindrical bore (2) and two pistons (3, 4). This water is fed to the brewing chamber (5) via a connection fitting (18) and via a through bore which extends through the wall of the brewing cylinder (1), into an annular gap (14) which is formed between a gasket (11) and the end face (13) of the second piston (4) facing the brewing chamber (5). Via a strainer (32), a conduit (34), and a further connection fitting (35), the coffee is discharged. Through the arrangement of the gap (14), the face (13) of the second piston ( 4) can be made without a strainer. The feeding of pressurized water to the gap (14) causes a self-cleaning effect in the latter. Through the strainer-less design of the end face (13) of the second piston (4), not only can a wearing part be eliminated, but a more cost-effective manufacture of the brewing apparatus can also be carried out.

    • In a coffee brewing apparatus, a milling assembly produces coffee powder which is filled into a brewing chamber. Then the brewing chamber is closed by a displaceable piston in order to exert a preselected pressure on the coffee powder in the brewing chamber, and hot water is forced through the compressed coffee powder. If it is recognized after several subsequent preparation cycles that too much or too less coffee powder has been filled into the brewing chamber, the operation period of the milling assembly is shortened or extended automatically under the influence of a programmed control unit. Simultaneously or additionally, a flow rate detector measures the amount of water flowing through the compressed coffee powder and the control unit measures the time required by the water to pass through the coffee powder in the brewing chamber. If a deviation of the measured time from a reference value is detected, the milling rate is adjusted to produce finer or coarser coffee powder in one of the subsequent preparation cycles. Minor deviations within normal tolerances are ignored.

For filtering the infusion, the device provides a solid disk having a central hole the outer diameter of which is smaller than the diameter of the chamber containing the coffee powder and the inner diameter is partially closed, the whole so that in all the infuse passing port is equivalent to what is considered the optimum surface of the usual filters, which is formed by the addition of all the surfaces of the single passing holes through the filter.
