    • A fat depth measuring apparatus and method for use in measuring in an animal (10) the depth of a fat layer (14) between hide (12) and muscle (16). An ultrasonic generator (25) generates ultrasonic pulses and an ultrasonic echo detector (25) generates echo signals (26) indicative of ultrasonic pulses received by the detector after reflection from boundaries or discontinuities (13, 15) within the tissues of the animal. Variable gain amplifier (35) amplifies the echo signals (26) and produces detector signals (38). Gain control means (40) varies the gain of the amplifier (35) to increase the probability of having exactly two detector signals (38) identifiable as arising from echoes from a hide/fat boundary (13) and a fat/muscle boundary (15). A fat depth determining means (47) receives the detector signals (38) and if they exceed primary threshold levels (39a, 39b) identifies the two required detector signals (38a, 38b) so as to thereby enable determination of the depth of the fat layer (14). If more than three detector signals have levels exceeding 60 % of the threshold level (39), the depth determination is considered invalid.

    • A process for packaging a meat product in a diced, minced, ground or other viscous form, the process comprising the steps of: (a) supplying the meat product to a flexible bag having at least one generally planar face and having a closable filling port communicating between the interior of the bag and a supply of the meat product, (b) disconnecting the inlet port from the supply, (c) closing the inlet port, and (d) freezing the bag and its meat product contents. A bag suitable for packaging a meat product is also described and comprises a first wall (12) and a second wall (14) and at least two flexible side walls (16, 18). Each side wall extends between the first and the second wall and is seamed therewith. The bag has a filling port (20) communicating between the bag interior and exterior through wall (12). Filling port (20) is suitable to allow meat to be pumped into the bag and is adapted for closure. The side walls are sufficiently flexible that the bag has a collapsed configuration and an expanded configuration. A filling port suitable for the described bag comprises a flange portion for mounting to a wall of the bag and a hollow tubular spout portion having a lip at its distal end. The spout portion is connected to the flange portion by bistable connecting means whereby the spout portion is capable of movement between a relatively stable retracted position in which, in use, the lip is substantially flush with or below the wall of the bag to facilitate stacking, and a relatively stable protruding position. The connecting means is joined with the spout portion at or near the proximate end of the spout portion whereby the spout portion does not intrude substantially further into the bag interior than the connecting means.

    • A process and apparatus for identifying a target section within an image of a meat section (12). Colour data for each pixel is stored and the pixels having a predetermined colour characteristic of the target section e.g. a certain red/green ratio, are discriminated. The process involves excising from a refined data set for the discriminated pixels at least one data set for a cluster of pixels representing an external image section which is adjacent to and contacting the target section but which does not form part of the target section, the excising step including analysing the shape of the refined image section represented by the refined data set to identify concavities and examining properties of links and/or properties of sub-sections formed by links to identify valid links demarcating the target section from adjacent touching external image sections. The refined data set after the excising step has been carried out is processed as the data set representing the target section of the image.
