    • PROBLEM TO BE SOLVED: To obtain a novel strain that has specific mycological properties and produces erythritol from inexpensive raw materials in high yield. SOLUTION: This novel microorganism is a Candida hydrocarbo-fumarjca NK-01 strain that has the following mycological properties: The cell morphology of its vegetative cell: ellipse to cylinder; the vegetative propagation: multipolar budding; the properties of culture solution: formation of precipitation to the bottom and coating films on the surface; ascospore: does not form; pseudohypha: forms; mycelia: does not form; glucose fermentation: negative; glucose assimilability: positive; arbutin decomposition: positive; urease: positive; when it is cultured aerobically in a liquid culture medium containing glucose or sucrose as main carbon sources glucose, erythritol is produced and other polyols are scarcely produced as by-products. In a preferred embodiment, this strain is inoculated in a culture medium containing glucose or sucrose as main carbon source and cultured aerobically to produce erythritol.
