    • A system, method and apparatus for detecting the presence or absence as well as the level of material in a beverage dispenser. The system includes a sensor assembly (28) including a light source (44) and a light detector (46). The source and detector are in close proximity to one another with the detector detecting a beam emitted from the source and the beam is reflected from material (36) retained in the container (24). A controller (26) is provided and receives a signal from the sensor assembly (28) for controllably operating functions of the beverage dispenser (20) based on the detection signal from the sensor assembly (28) relating to material (36) in the container (24). The apparatus for detecting a level of material in the container includes a comparator (70) coupled to the sensor assembly (28) for receiving a signal from the detector (46), the output from the comparator (70) coupled to the controller (26). A variable gain amplifier (66) is coupled to the detector (46) for receiving an output signal from the detector. The variable gain amplifier (66) provides an input signal to the comparator (70). The method of operation of the system and apparatus compensates for tolerances and environmental variables.

    • The present disclosure includes an extraction assembly for use in an automatic brewer. The extraction assembly includes controllably extracting espresso beverage from a quantity of brewing substance. The assembly facilitates improved control and operation of the extraction assembly and improves the reliability of the extraction assembly. Generally, the brewing substance is compacted between a pair of opposing pistons. The pair of pistons operates relative to a brew chamber for use in the espresso extraction process. An alternative extraction assembly or structure for brewing beverage is provided which may include a larger brew volume, enhanced structures, and removable replacement components. Also provided is a heating element in close proximity to the brew chamber. Heat form the heating element can be brought directly to the area in which the coffee is brewed to help maintain a more consistent, tighter tolerance temperature and faster recovery between brew cycles.

    • The present disclosure includes an extraction assembly for use in an automatic espresso brewer. The extraction assembly includes components and methods for controllably extracting espresso beverage from a quantity of brewing substance. The components, assemblies, and methods facilitate improved control and operation of the extraction assembly and improve the reliability of the extraction assembly. The brewing substance is compacted between a pair of opposing pistons. Compacting force is monitored through at least one sensor carried on the extraction assembly to provide a signal to a controller. A predetermined compacting force may be programmed into the system for all brewing cycles or dependent upon the brewing substance used. The pair of pistons operates relative to a brew chamber for use in the espresso extraction process. The pistons provide compacting force and boundaries within the chamber and facilitate removal of a spent brewing substance puck at the end of the brewing cycle. Compacting force is monitored at the start of the brewing process and a predetermined force is required before the brewing process can be started. During the brewing process compacting force can be maintained and controllably adjusted. A variety of sensor methods and locations can be used to detect and monitoring compacting force.
