摘要： PURPOSE: The breathing fermented food container is provided to maintain the storage period for a long time and freshness by smoothly exhausting the gas of a fermented food, and also not to leak the juice. CONSTITUTION: The container is composed of: a lower bowl part for containing the substance: a cap; a circular supporting stand to be contacted with the lower part not to leak the Kimchi juice at the part of the cap; a sealing device which means nobody opened it at a part of a locking device contacted with the upper/lower parts; forming small space when the upper/lower parts are combined; sanding process at the part contacted with the cap and the bowl to exhaust gas outward. The exhaust of the gas is performed using the elasticity of plastic itself.

The application of an organic acid or its salt with a fermentation derived antimicrobial peptide offers a robust solution to curtail growth of spores and vegetative cells without the need for chemicals, such as sodium nitrite, sodium nitrate or sorbate.
