Foodstuffs exemplified by coffee, butter, eggs, fruit, vegetables, sardines, salami and sliced salted bacon, are preserved against chemical deterioration by storing them at ambient temperature in a protective atmosphere maintained at a pressure not exceeding about 1 atmosphere and consisting of, or comprising, nitrous oxide. The atmosphere may consist of nitrous oxide, one or more inert gases, and/or oxygen; the partial pressure of the oxygen in the atmosphere should not exceed 20% of the partial pressure of the nitrous oxide. The treatment with nitrous oxide may be used in combination with other sterilizing treatments e.g. irradiation with radio-active isotopes. The nitrous oxide-containing atmosphere may be produced by (i) first evacuating air from the foodstuffs contained in a receptacle and then feeding in nitrous oxide to the required pressure, (ii) successive washing operations with inert gases, then exhausting such inert gases and feeding in nitrous oxide to the required pressure, or (iii) successive washing operations with nitrous oxide until the required partial pressure of nitrous oxide is reached. The foodstuffs may be stored under the nitrous oxide atmosphere in containers made of metal, plastic, or paper impregnated with synthetic solutions, and in warehouses or silos.
