[Problem] To provide a cooked-rice improver whereby an oil and fat can be easily emulsified immediately after addition thereof, and whereby it is possible to obtain cooked rice with good flavor which has excellent cooked-rice releasing effect, little crumbling of rice grains and good grain properties, and in which aging is suppressed and richness is also enhanced. [Solution] The present invention is a cooked-rice improver containing an oil and fat, an ionic surfactant, and a polyalcohol, the cooked-rice improver being characterized in that the content of the oil and fat is 8-65 mass% with respect to the total quantity of the cooked-rice improver, and the L2-L1 value calculated by the method below at 20°C is positive. L1 value: brightness value of the cooked-rice improver. L2 value: brightness value of an emulsion obtained by adding pure water in the amount of 100 times the mass of the cooked-rice improver to the cooked-rice improver.
