Die vorliegende Erfindung betrifft eine aktivierte pektinhaltige Apfelfaser und ein Verfahren zu ihrer Herstellung. Die Erfindung betrifft zudem die Verwendung der pektinhaltigen Apfelfaser als Verdickungs- oder Strukturmittel in verschiedenen industriellen Erzeugnissen. Weiterhin betrifft die Erfindung eine Mischung der aktivierten pektinhaltigen Apfelfaser mit einem löslichen Pektin und ein Lebensmittel, Nahrungsergänzungsmittel, Futterprodukt, Getränk, kosmetisches Erzeugnis, pharmazeutisches Erzeugnis oder Medizinprodukt, das unter Verwendung der erfindungsgemäßen pektinhaltigen Apfelfaser hergestellt worden ist.

The present invention relates to an activated, pectin-containing apple fiber and to a method for the production thereof. The invention also relates to the use of the pectin-containing apple fiber as a thickening or structuring agent in various industrial products. The invention further relates to a mixture of the activated, pectin-containing apple fiber with a soluble pectin and to a food product, a food supplement, a feed product, a beverage, a cosmetic product, a pharmaceutical product or a medical product, which has been produced using the pectin-containing apple fiber according to the invention.
