The present invention concerns ready-to-eat vegan or vegetarian food preparations and the preparation methods thereof. Said preparations include a structural ingredient, a sweet ingredient and an acid ingredient and are characterized in that they are obtained entirely from gluten-free wholegrain cereals, preferably from sprouted brown rice. Acting on said ingredients and adding a minor fraction of external ingredients, i.e. not derived from cereals, it is possible to obtain various vegan food products which imitate products of traditional gastronomy, e.g. a vegan substitute for sushi. Furthermore, said preparations are characterized by a nutritional profile rich in bioavailable micronutrients which meet dietary needs not only of vegans/vegetarian but also of individuals requiring specific dietary regimes such as hypoproteic or hyperproteic regimes.
