The object of the present invention is to provide a Goya koji composition, produced from Goya that is economically cheap and easily available, by the fermentation using koji fungi, wherein the Goya koji composition has improved antioxidant activity and ACE-inhibitory activity compared to before the fermentation; and exerts a higher functional effect and a less bitterness without side-effects compared to when fermented using lactic acid bacteria. A method for producing the Goya koji composition is also provided. A carbon source is added to the dried and ground substance of Goya, which is then added with water and fermented using koji fungi, Aspergillus oryzae (IFO4079) or Aspergillus awamori (IFO6082). The processed substance after the fermentation is dried to obtain a Goya koji composition with improved antioxidant and ACE-inhibitory activities. The koji composition exerted a significantly improved antioxidant and ACE-inhibitory activities compared to a processed Goya obtained by lactic acid fermentation.
