본발명은생강식초및 그제조방법에관한것으로, 보다구체적으로는생강을이용하여식초로제조하되, 생강그대로를이용하지않고생강을생강즙과생강부산물에올리고당, 원당및 정제수를혼합하여제조한생강죽으로가공하여이용함으로써생강식초제조시 발효시간을단축하고발효효율성을증진시킬수 있는장점이있으며, 생강식초제조과정에서올리고당과원당을적정비율로첨가함으로써식초그대로음용이가능한장점이있는생강식초및 그제조방법에관한것이다.
