PURPOSE: A method for killing bacteria and the killed bacteria are provided to completely kill the bacteria by treating the bacteria with a polyethylene glycol-based non-ionic surfactant, and to maintain high activity of an enzyme expressed in the bacteria. CONSTITUTION: A method for killing bacteria comprises the step of treating the bacteria or a culture containing the bacteria with 0.1-10 % of a polyethylene glycol-based non-ionic surfactant selected from the group consisting of an ether type, an ester type, and a nitrogenous type at 0-70 deg. C. A material containing killed bacteria for manufacturing foods contains: the polyethylene glycol-based non-ionic surfactant; and galactose or arabinose isomerase.
