摘要：
PURPOSE:To provide a method and an apparatus for measuring water content in a mixture of fat and oil conveniently with high reproducibility. CONSTITUTION:When water content in a mixture of fat and oil is measured by direct drying method, drying operation is ended at a moment when the temperature variation of the mixture stops. A sensor for measuring the temperature of the mixture is provided for that purpose as well as a temperature controllable heater. Since the end of drying operation can be determined objectively, the water content can be determined with no individual difference. Furthermore, a plurality of samples can be heated simultaneously while preventing local overheat.
