The invention also relates to a process for the preparation of the artificial oil bodies. These AOB, especially for the production of various kinds of other molecules, such as bioactive molecules used may further comprise a product, the oxidation stability of the oil-in-water emulsion without the addition of an antioxidant it is useful. The present invention also encompasses a method for partially purifying the oleosin from plant extracts.
