PROBLEM TO BE SOLVED: To obtain a fresh cheese having a good preserving property, a suitable hardness, a smooth texture and a high fat content, and to provide its production method. SOLUTION: This fresh cheese characterized by containing 3-15 wt.% solid milk content without fat, 20-45 wt.% milk fat content and 0.1-0.5 wt.% stabilizer and showing 80-200 gf hardness at 10 deg.C, is obtained by heating for sterilizing a concentrated milk containing the solid milk content without fat and milk fat content in the above ranges, homogenizing the heated product at 80-250 kg/cm2, then forming a curd by adding a rennet or an organic acid and then adding a stabilizer.
