The present invention relates to a reversible plate (10a) for straining cheeses, characterized in that it comprises a frame (12) having two large parallel faces (13, 14) bounded by four sides opposite in pairs, a wall (20) supported on the frame sides (12) while inclining from one side (15a) to the opposite side (15b), at least one opening (23a, 23b) formed in each of the sides (15a, 15b) of the frame (12) at which are located the upstream ends (20a) and downstream (20b) of the inclined wall (20), the openings (23a, 23b) being located on both the other of the inclined wall (20), respectively between the downstream end thereof and the corresponding large side of the frame, the supports (25) projecting from each of the faces (21, 22) of the inclined wall (20 ) so as to define two bearing surfaces (27, 28) parallel to the large faces (13, 14) of the frame, and means for securing a drip store on each of the bearing surfaces (27, 28).
