The invention discloses a processing technology of radix puerariae slices. The processing technology comprises the following specific steps of (1) collecting radix puerariae, performing thorough cleaning, and performing peeling; (2) cutting the cleaned and peeled radix puerariae into radix puerariae slices; (3) putting the radix puerariae slices in salt water of 500mg/kg, and performing soaking for 15-30min; (4) adding the radix puerariae slices soaked in the salt water in a color fixative consisting of vitamin C, citric acid, a d-sodium erythorbate solution and clean water, and performing soaking for 40-80 min; (5) steaming the radix puerariae slices soaked in the color fixative with steam, and after the radix puerariae slices are thoroughly steamed, performing cooling to 45 DEG C; and (6) performing freeze drying on the radix puerariae slices after being cooled, performing packing and performing warehousing. The radix puerariae slices prepared by the processing technology not only reserve original components of the radix puerariae, but also are good in mouth feel, can be directly eaten, besides, are good in color, and have favorable market prospects.
