The invention relates to the field of chocolate processing, in particular to chocolate powder crumb and a preparation method thereof. The chocolate powder crumb comprises the following components in percentage by weight: 15 to 70% of white granulated sugar, 0.001 to 30% of milk powder, 0 to 50% of cocoa powder, 0 to 60% of cocoa liquor, 5 to 25% of grease, 5 to 30% of lactose, 1 to 11% of anhydrous glucose, 0 to 30% of edible material, 0.05 to 0.4% of lecithin, 0 to 3% of fatty acid monoglyceride, and 0 to 1 .5% of an excipient. The total fat content of the chocolate is as low as 5-20%, and nopartial or integral continuous oil phase is formed during the preparation process, and even if the chocolate powder crumb is immediately packaged and cold, no local agglomeration or overall agglomeration phenomenon is generated. The chocolate powder crumb prepared by the preparation method of the invention has rich mouthfeel and wide application range; the process steps are simple, and the cost is low.
