The invention provides a fiber scale type shredded meat paste product and a processing method thereof. The processing method comprises the following steps of (1) raw material selection and processing:thawing rejected laying hen brisket and pig fat; then performing mincing; planing the materials into fragments after the laying hen brisket thaws; using seasoning materials as auxiliary materials; (2) picked meat pulp preparation: stirring the minced rejected laying hen brisket; adding table salt for stirring so as to form meat paste slurry; performing fresh keeping pickling to obtain pickling meat pulp; (3) stirred meat pulp preparation: chopping and mixing the laying hen brisket; adding seasoning materials; performing chopping stirring to obtain stirred meat pulp; (4) mixed meat paste preparation: mixing and uniformly stirring the pickled meat pulp, stirring meat pulp and pig fat; after the processing to the cooked state, obtaining the fiber scale type shredded meat paste product. The meat paste product made by the method considers the elasticity and the brittleness of the conventional meat paste product; the meat fiber feeling is stronger; the product structure is in puff scale type distribution; a fiber-new shredding experience is provided for customers.
